Slow Cooker Mashed Potatoes

I LOVE potatoes. And, for holiday meals, potatoes are a staple. Good thing I love potatoes. And good thing I have a hubby that loves to eat them too.

For our Christmas dinner, I wanted to make the ‘ole staple. But, I didn’t want to have all of my dishes needing to be made at the same time. So, I found a recipe to help me with that. I found a delicious slow cooker recipe (and we all know about my on-going “love affair” with my slow cooker…) that would solve that issue.

They turned out fabulously. And, with my new KitchenAid mixer that I got for Christmas, it made the job even easier!

Here’s what you need:

  • 4-5 medium sized russet potatoes
  • 1/2 cup of butter, cut into chunks (original recipe called for 1 cup — but I cut that in half and it was fine)
  • 1 cup of water
  • 2 teaspoons of pepper
  • 1 teaspoon of salt
  • 1 1/3 cups of milk (plus more, if needed)

Here’s what you do:

  • Peel and dice your potatoes.
  • Add potatoes, butter, water, salt and pepper to your slow cooker.
  • Cook on HIGH for 4 hours.
  • Mash potatoes in the slow cooker, or move to your stand mixer and turn on low (to medium-low) speed. (DO NOT drain liquid from potatoes.)
  • Add milk and mix/mash thoroughly until there is a creamy texture.
  • Serve and enjoy!

This dish was very good, one of the best potato dishes I’ve made. Not sure if that was because it was slow cooked, or because of the mixer mixing/mashing it up better than I normally do…but, in the end, it doesn’t matter. It’s wonderfully delectable! So, give it a shot and see what you think!
